No Need to Knead Basic Dough

Very good recipe for a white bread that can be formed into different shapes. Still need to tweak it for the less gluten in whole wheat bread.

Ingredients

* 2c lukewarm water
* 2tsp yeast
* 4c unbleached bread flour
* 2-3tsp salt

Directions

1. Add water to large bowl
2. Add yeast to the water and stir to dissolve
3. Stir in 2c of the flour until smooth
4. Stir in the remaining flour a little bit at a time until the dough pulls away from the sides
5. Cover and refrigerate overnight
6. Remove dough and let sit at room tempertature 2-3 hours
7. Shape and bake (400deg for 30-35 for loafs, 450deg for 15-20 for focaccia, 450deg for 12-15)
